Il Cavaliere reopens its doors: a new season of contemporary cuisine at Castello di Gabbiano

Castello di Gabbiano announces the seasonal reopening of the restaurant Il Cavaliere, ready to welcome guests with a new menu that combines creativity, technique and locally sourced ingredients. A gastronomic proposal that tells the story of Tuscany through a modern perspective, created by our kitchen brigade led by Giacomo Bussotti.

Il Cavaliere reopens its doors: a new season of contemporary cuisine at Castello di Gabbiano - Il Cavaliere di Gabbiano 1 Among the new proposals, the Pigeon with turnip greens, liver parfait and the Estate’s Vinsanto stands out, a signature dish of Il Cavaliere that brings together technique and flavor while celebrating one of the symbolic wines of our production.

Alongside it, two creations express the philosophy of our cuisine: the Egg cooked at 63° with Parmigiano and black truffle, an appetizer that interprets tradition in an elegant and essential way, and the Chitarra pasta with butter and anchovies with dehydrated raspberries, a surprising play of savoriness and acidity.

Completing the offer are the wines of Castello di Gabbiano, accompanied by national and international labels to pair with every gastronomic journey. It is also confirmed for this season the possibility of choosing one of our tasting menus: a shorter four‑course option or, for the more indulgent, a six‑course proposal.
