The scents and flavors of autumn come to life in the delicious new menu at Il Cavaliere, the restaurant of Castello di Gabbiano in Mercatale Val di Pesa. The brigade, led by Chef Giacomo Bussotti, is ready to delight and surprise guests with authentic, irresistible flavors that express a genuine cuisine deeply connected to the land and Tuscan tradition, in full respect of nature’s rhythms and cycles.

The new menu is a true taste journey, bringing to the table the restaurant’s signature classics along with surprising pairings: a mix of combinations and influences that enhance every detail.

Among the new entries in the “To Continue” section, the chef presents Venison Cappelletti with sweet-and-sour onion cream and red berries. A refined encounter between the richness of the meat, the sweetness of the onion, and the lively, tangy touch of red berries. A dish that tells the story of autumn through intense aromas and perfectly balanced contrasts.

For the main courses, a must-have makes its return: Mr. Pigeon. In its autumn version, it is served with Pomegranate and Confit Potato. The bold, sophisticated flavor of pigeon pairs beautifully with the sweet acidity of pomegranate, accompanied by the confit potato. Slowly cooked, the potato becomes tender, flavorful, and aromatic—much more than a side dish, a true caress of softness that creates perfect harmony between intensity and delicacy.

To finish, an irresistible sweet treat for both palate and heart. Warm autumn colors come alive in the unexpected meeting of the rich sweetness of chocolate and the spicy notes of curry. Here comes Pear Tart with Gorgonzola Ice Cream, a dessert that combines seasonality and indulgence, celebrating the pleasure of a rich and surprisingly harmonious pairing. A perfect finale for those who love to be amazed at the table.
